Course goals
UAS graduates with an oenology major are noted for the high level of their technical, theoretical and practical knowledge in the fields of viticulture, oenology and business management. Viticulture theory and practice cover: soil, climate, ampelography, cultural aspects, machinery and phytopathology. They have the necessary skills to set up and manage a viticultural business. In oenology, they master and integrate, in theory as well as in practice, knowledge that brings together different vinification techniques, sensorial analysis, wine microbiology and oenological analysis. They have the knowledge needed to build and manage a cellar as well as a wine sales businesses. In management, they can create and oversee a business strategy that takes into account legal and business aspects as well as agricultural policies, competition and marketing. Mastering these various areas and the ability to use this knowledge equips the UAS graduate with a major in oenology to function at the management level in the viticultural and vinicultural fields.

The education offered by the oenology course meets requirements set by the Organisation Internationale de la Vigne et du Vin (OIV), 2/1991, 2/1992 and 7/1976, for an oenologist’s education, specific knowledge and degree conferred.
This knowledge covers viticulture, oenology and business management; it is both practical and theoretical and covers technical as well as scientific areas.
